Yes, bean burgers. They are delicious. Satisfying. Healthy. Vegan. Nutritious. I could go on and on. These are a favorite with my family and friends. People are usually very intrigued when they hear “bean burger,” not really knowing what to think. Meatless burger?? What?? Well, these get rave reviews. Since I’ve seriously cut back my meat intake (and declared myself a flexitarian, not a vegetarian completely) in the last year, these burgers are a go-to must-have, especially since you can freeze them and thaw at any time for lunch or dinner! Bon appétit.
(Note: you need a food processor. If you don’t have one, seriously consider buying one. You can make anything, including your own nut butters and dough. Highly recommended.)
Ingredients:
1/2 can black beans (drained/rinsed)
1/2 can red/kidney beans (drained/rinsed)
1/2 cup bread crumbs
1/4 cup Vital wheat gluten (or substitute by using a gluten-free flour)
1 cooked sweet potato
1/2 cup chopped onion
1 garlic clove minced
Salt
Pepper
1/2 teaspoon dried thyme
1 tablespoon minced fresh parsley
1 teaspoon smoked paprika
Oil
Frying Pan
Food Processor
How to:
Sauté onions and garlic.
In food processor, add the beans (black and red), onion, garlic, bread crumbs, vital wheat gluten (or other flour), salt, pepper, thyme, parsley, and smoked paprika.
After processing, add cooked sweet potato and mix by hand.
Shape into burgers or balls.
For immediate consumption: Sauté in oil and serve.
For later consumption: Freeze. Thaw when ready and sauté in oil and serve.
Top with your favorite condiments (I love FunniBonz BBQ sauce.) and/or with a bun.
Makes 6 burgers or 12 bean balls (depending on how big you make them!)
Feel free to use any kind of bean you like, or mix and match.
